♥ Summer Love ♥

Welcome back Summer. It's been a while and we have missed you very much.



Strawberries are in season and what better way to celebrate the first second day of summer than with a deliciously light and fresh strawberry salad. All ingredients provided by the family-owned farm down the road, Coulter Farms.

Strawberry Salad with Balsamic Honey Vinaigrette

Salad Ingredients:


-Bunch Fresh lettuce 

-4 (or more) Fresh radishes
-1 cup Fresh strawberries
-3 (or more) Fresh leeks
-handful of raisins
-handful of Almonds (optional)
-Garlic Salt to taste
-Pepper to taste
-Bacon bits (optional)

Balsamic Honey Vinaigrette Ingredients:


-1/4 cup balsamic vinegar

-2 tablespoons honey
-1/2 cup of olive oil 

Mix your salad ingredients in a large bowl. 

Stir together the honey and balsamic vinegar in a bowl, slowly whisk in the olive oil into the bowl. Continue to whisk until thoroughly mixed. Add salt and pepper if needed. Drizzle vinaigrette over salad when ready to serve. 


The next time I make the vinaigrette, I'm going to only use 1/4 cup of olive oil. I will let you know how it turns out.
